State Fair Apple Muffins



1 cup grated apple
1 cup whole raw milk
1/4 cup melted lard
1/2 tsp organic vanilla
1 free range egg
2 cups unbleached flour
1/2 tsp cinnamon
1/3 cup unrefined, unbleached whole cane sugar
3 tsp baking powder
1/2 tsp sea salt

Streusel Topping
     1/4 cup unbleached flour
     2 tablespoons packed brown sugar
     2 tablespoons cold butter
     1/4 tsp ground cinnamon

1. Preheat oven to 400 degrees.

2. Line muffin tin with paper muffin cups or grease bottoms only of muffin tins.

3. Melt lard in small saucepan.

4. In a small bowl mix together Streusel Topping ingredients with a fork being sure to break up butter so it is evenly distributed in topping mix.  Set aside.

5. Grate apple.  (I used two small apples - peeled and cored).

6. In a large bowl with a wooden spoon, stir together milk, apple, lard, vanilla, and egg.

7.  Add flour, cinnamon, sugar, baking powder and salt.

8.  Stir all ingredients until mixed.  Batter will not be smooth.

9.  Divide batter evenly between the muffin cups.

!0. Evenly spoon Streusel Topping over tops of all 12 muffins.

11. Bake approximately 20 to 25 minutes.
